Pumpkin Pie Crunch Recipe


I love this recipe my sister-in-law shared with me.....it's a twist on the traditional pumpkin pie we all eat over the holidays. My husband is not a big fan of pumpkin pie but he loves this recipe!

Ingredients:
  • 1 pkg Boxed Cake Mix (white or yellow)
  • 1- 16 oz can of Pumpkin (2 cups)
  • 1- 12 oz can Evaporated Milk
  • 3 Eggs
  • 1 1/2 Cups Sugar
  • 4 tsp Pumpkin Pie Spice
  • 1/2 tsp Salt
  • 1 Cup Butter
  • Optional-1 Cup Chopped Pecans

Directions:

  1. Preheat oven to 350. Grease bottom of a 9X13 pan.
  2. Combine pumpkin, evaporated milk, eggs, sugar, pumpkin spice, and salt. Mix together.
  3. Pour mixture into bottom of the 9X13 pan.
  4. Sprinkle dry cake mix, pecans and butter over the top.
  5. You can prepare this early and refrigerate until ready to serve.
  6. Bake 50-55 minutes.
  7. Cool slightly and serve with some vanilla ice cream...YUMMY!
