I love this recipe my sister-in-law shared with me.....it's a twist on the traditional pumpkin pie we all eat over the holidays. My husband is not a big fan of pumpkin pie but he loves this recipe!
Ingredients:
- 1 pkg Boxed Cake Mix (white or yellow)
- 1- 16 oz can of Pumpkin (2 cups)
- 1- 12 oz can Evaporated Milk
- 3 Eggs
- 1 1/2 Cups Sugar
- 4 tsp Pumpkin Pie Spice
- 1/2 tsp Salt
- 1 Cup Butter
- Optional-1 Cup Chopped Pecans
Directions:
- Preheat oven to 350. Grease bottom of a 9X13 pan.
- Combine pumpkin, evaporated milk, eggs, sugar, pumpkin spice, and salt. Mix together.
- Pour mixture into bottom of the 9X13 pan.
- Sprinkle dry cake mix, pecans and butter over the top.
- You can prepare this early and refrigerate until ready to serve.
- Bake 50-55 minutes.
- Cool slightly and serve with some vanilla ice cream...YUMMY!
